Cherry Lime Lassi

I worked at a Sonic Drive-In for about a year before I left for college. We sold tons of these Cherry Limeade drinks made with super sweet cherry syrup, lemon-lime soda, and fresh squeezed limes. I have to admit that while terrible for you, it was yummy. Some people even got the mix blended into vanilla ice cream for a cherry-lemon-lime shake.

This cherry lime lassi is a healthy homage to the flavor bomb created when cherry and lime are mixed. It’s a classic for a reason!

This recipe is a healthy and delicious way to use up all of the ripe summer cherries! To make this recipe even quicker, I recommend prepping bags of pitted cherries and storing them in the freezer! There are about 11 pitted cherries per cup in my experience. If you have it on hand, adding a tablespoon or so of tart cherry juice amps up that cherry flavor even more.
The lime can be adjusted to your tastes. The sweeter the cherries are, the more lime you will need to strike your perfect balance.

Traditional lassi uses plain yogurt, not greek yogurt. However, with a full cup of cherries, the juiciness makes for a really, really liquid-y lassi when plain yogurt is used. Therefore, I recommend greek yogurt in this recipe.
